This workshop will involve theory, demonstrations and practical elements. The course will cover:
  • Relevant legislation
  • Selection of meat
  • Quality of meat
  • Practical cutting skills using half carcass each, including jointing, boning and rolling using traditional butchery techniques
  • Presentation of meat and storage
  • Packaging of meat
This course is heavily subsidised by the Menter Moch Cymru project, allowing us to offer it at a cost of £50. Places are limited therefore will be reserved first come, first served based on receipt of payment.
